Method:
1. Peel of the outer skin of the carrots and rinse them with water.
2. Take some cashew nuts, almonds, pista and raisins. Mix them and keep
them aside.
3. Grate the washed carrots with medium size grater (not too thick
and not too thin)
4. Take a big pan and add the milk to boil.
5. Next, add the grated carrots and mix them well.
6. Now, we need to cook this for about an hour. This step will take
maximum amount of time. Make sure you keep mixing it after every few minutes or
so. This will make sure that carrots blend well with the milk. We need to cook
this until all the milk evaporates and turn into khoa (https://en.wikipedia.org/wiki/Khoa) . It will look like this:
7. Once the milk turns into khoa, add ghee and sugar. Give
it a good mix.
8. Lastly, add crushed mixed nuts to it and cook it on simmer for
around 5 minutes until the ghee comes out on the surface( shiny types surface).
9. Serve hot. Garnish it with grated khoa on the top. (Optional).
