INDONESIAN LAYER CAKE

  1. Separate the egg yolks and egg white in different bowls.
  2. Whisk together Castor sugar, Egg yolks and vanilla essence until it turns into a nice and creamy mixture. (You can use a blender for this)
  3.  Now add softened yellow butter (microwave it for 30 seconds) brandy and mixed spice. Next stir in flour. Give it a good mix.
  4. Whisk the egg white to soft peak and then gradually fold it in the above mixture.
  5. Pre-heat your oven or microwave at 180 degree Celsius or 356 Fahrenheit.
  6. Grease a 15 cm by 15 cm square cake tin with the butter properly on the base and the sides.
  7. Then add 2 spoonfuls of the batter and spread it evenly over the base. Put the tin inside the oven and grill it for around 6-7 minutes until the surface is light brown.
  8. Repeat step 7 and cook it layer by layer for 6-7 minutes until you are done with the batter.
