Method:
- Wash your pasta properly.
- Take some water in a pan. Add 1 tablespoon oil, salt and your pasta in it.
- Cook it on simmer by keeping a lid on it, till it becomes nice and soft.
- In the mean while, take a separate cooking pan, add some oil and freshly grated garlic.
- When it leaves its fragrance, add chopped onions, carrots and capsicum. You can also add fresh olives, jalapeno as per your choice.
- Cook them till they turn soft and shiny.
- Add milk to it and keep stirring continuously. Simmer it for 5-6 minutes.
- Now it’s the turn of some spices that will enhance its flavor. Add red pepper, garam masala, salt and white pepper to it.
- Hey you forgot about the pasta!!! Please keep an eye on it. When it becomes soft, pass it through sieve to remove all the water content from it. Keep it aside.
- Take two teaspoon of corn flour and 2 tablespoon of water in a bowl and mix them properly till it forms a homogeneous mixture.
- Add this mixture to the cooking pan to thicken the sauce and stir it properly.
- Add some freshly grated parmesan cheese.
- Finally add the boiled pasta and toss some fresh oregano.
- Garnish it with spring onion (the green part) and serve hot!!!
