Pasta in Pesto Sauce

PASTA IN PESTO SAUCE

Fresh Cream
1 tablespoon

Method:


  1. Wash your pasta properly. I took spaghetti pasta for making pesto sauce pasta.

  1. Take water in a pan.  Add 1 tablespoon oil, salt and your pasta in it. Do not break your pasta. Just add it to the pan, it will gradually become soft and tender.

  1. Cook it on simmer by keeping a lid on it, till it becomes nice and soft.

  1. Take a bowl. Add pine nuts, garlic pieces, parmesan cheese and basil leaves. Crush it with the help of Mortar-Pestle until a fine paste is formed. In another pan, blend the fresh cream till it becomes soft and nice. Don’t overdo it otherwise it will turn into white butter.  :-P. Add this cream to the above paste.

  1. In the meanwhile, take a separate cooking pan, add some oil and freshly grated garlic. When it leaves its fragrance, add chopped onions and sauté for a while.


  1.  Next add the previously formed paste to the cooking pan along with the spices i.e. red pepper, white pepper, garam masala, pinch of black pepper and salt according to the taste.

  1.  Drain excess water from the boiled pasta and add it to the pan along with the milk(1/4 cup). Milk is optional. You can skip it if you feel like. Cook for 3-4 minutes and serve hot. Garnish it with fresh basil leaves.
