Method:

  1. Dice capsicum, cabbage, onions and boil the peas.
  2. Take a pan, add some generous amount of oil and sauté them all for five-ten minutes until they become tender.
  3. Now, take a bowl. Add refined flour, 1 tablespoon oil and water. Make it dough using your hands.
  4. Grab a small part of the dough and roll it in the form a round shape plate. Use some refined flour so that it doesn't stick on the surface.
  5. Now add a layer of processed cheese/cheddar cheese at the center. Then, add the sautéed vegetables, cheese pieces, tomato sauce (1 teaspoon), mint sauce (1 teaspoon) and tamarind sauce (1 teaspoon). Lastly add some fresh Parsley/Coriander leaves. Hold the two opposite sides of the base and bring them together in the center, the same way when we pack things up. Next, we need to close off the other two sides. At one side, just wrap the base and fold it. Do the same for the other side. Press it using a fork.
  6. Remember not to overdo the filling. Otherwise, while frying them, the filling will come out.
  7. Take a pan and pour a generous amount of oil for frying. When the temperature rises, add the above made rolls into the pan and let them deep fry until they turn golden brown. Serve hot with green chutney/ Coriander sauce.
  8. Also, if you want to make it like an open bucket, then just add the filling a little bit more. And don’t close of sides properly, just tuck them up. Then using a steel sieve, fry it very carefully not to spill the fillings, and serve hot. See the picture below.:)
  9. Happy Cooking! J
