Method:
- Chop all the vegetables i.e. onions, tomatoes, capsicum and keep them aside in a bowl. You can add as many vegetables as you like such as mushrooms, olives etc.
 - Take suji in a bowl. Add curd slowly and give it a good mix. Then add water, so that it becomes voluble.
 - Now add all the spices like salt, red chili pepper, garam masala, fresh green chilies and the chopped vegetables.
 - Mix it nicely till it turns into a nice and creamy flowy batter.
 - Heat a non-stick fry pan and add some generous amount of oil in it.
 - Spread the mixture evenly on the surface of pan. Cook it on both the sides until it acquires a shiny brownish tinge. Add oil if necessary.
 - I will tell you a technique – To prevent it from sticking to surface in the center, make a hole in the center and add a bit of oil while cooking. With this, your siji delight won’t stick to surface of the pan and it would be easier for you to turn it upside down.
 - Serve it with Tomato and Basil sauce.
