Method:
1. Take wheat flour, suji (semolina) and carom seeds (ajwain) and make a dough
that should be hard in nature. The addition of suji(semolina) will make it crispy.
2. Keep it aside for half an hour. In the mean time chop garlic or
ginger, onions and green chili.
3. Boil potatoes in a cooker side by side.
4. Take a pan, add some oil into it. When its temperature rises, add
the above ingredients one by one respectively. Sauté them for a while till the
onions turn pink in nature.
5. Now add salt, dhaniya powder and turmeric powder. It smells
amazing.:)
6. Wash the tomatoes properly and grate them in a bowl.
7. Add them to the above mixture and cook till it leaves oil on the
side of the pan.
8. Finally add red chili powder, garam masala (spices)and diced
boiled potatoes (cut them into small triangle pieces).
9. For a variation in the flavor, add a teaspoon of mango pickle masala(gravy).
This makes it nice and spicy in nature.
10.
Garnish it with fresh cream and
basil leaves.
11.
Now, take a pan. Add a generous
amount of oil in it. Make small balls of the dough and roll them into small chapatti.
Fry them one by one and eat them with hot hot achari potatoes.
12.
